In the old times, when many people of the islands were slaughtering a pig every winter, siglina was one of the most important cured meats they were preparing. Siglina are small pieces of pork meat preserved in fat. Sometimes though this word means only the fat used to prepare the traditional furtalia which is the very filling omelette in Andros and Tinos.
