Its name describes a cheese which has been kneaded. It is a specialty of Andros and it is nothing more than a fresh cheese which has been pressed between two slabs and which afterwards is kneaded with some salt. Its texture is that of a good quality ricotta but with a more pungent taste. Its shape can vary and it is preserved covered with a cloth dipped in raki.
